Melt butter in deep pot. Sauté onions and celery until still slightly crispy. They will continue to cook while turkey is roasting. Add salt, pepper, poultry seasoning (Bell's is best), milk or water and beaten egg(s). Mix thoroughly. Add bread cubes. Stuffing bread is best if you can find it. Otherwise, a sturdy textured bread, cubed. No marshmallow bread (i.e. Wonderbread). It gets slimy. Mix until all is dampened. Stuff turkey.

As you can see this goes way back. To make Grandpa's oyster dressing which Grandma absolutely refused to put in the turkey, she just added a can of shucked oysters to this recipe and baked it in a separate casserole dish. On Thanksgiving, Grandpa ate only the turkey (legs, liver, hearts and gizzards were just his) and oyster dressing. He said he could get the other stuff any time, but only got this on Thanksgiving.
