1 1/2 cups cooked and mashed sweet potatoes 3 eggs, beaten 1/2 cup sugar 1 teaspoon cinnamon 1/4 teaspoon ginger 1/2 teaspoon nutmeg 1 cup cream or milk (or evaported milk)
Blend together sweet potatoes and eggs. Add and blend sugar, cinnamon, ginger, and nutmeg. Stir in cream (or milk), mixing thoroughly. Turn into unbaked pie shell, and bake. 425 degrees F. 15 minutes, then reduce heat to 350 degrees F. and bake for 25 minutes, or until center is firm.
