5 pounds red or white potatoes (not baking potatoes)
2 cups mayonnaise
½ cup Wishbone Italian Dressing, more if desired
1 onion (approx. 2 ½ inches in diameter)
1 teaspoon salt
pepper if desired

Directions:
Directions:
Simmer potatoes in their skins until fork tender, but not too well done. Fork goes in easily but the potato should have a little firmness in the middle. Drain well. Let potatoes cool until you are able to handle them. Peel potatoes using fork to hold them if they are too warm. They should be warm so they absorb the dressing. Skins can be left on if desired. Slice into ¼ inch slices in big bowl.

Grate onion into bowl with potatoes. Mix mayonnaise and Italian dressing. Gently fold into potatoes trying not to break potatoes up. Add salt and pepper to taste. The dressing has a lot of seasoning so you may not need much.

Refrigerate until cold. Garnish with parsley and serve.
