1 qt. water
turkey parts - neck, tail, giblets
celery - leafy part
half an onion with skin on
salt and pepper
Bring turkey parts to a boil and simmer for about 1 hour uncovered.
Strain liquid into a measuring cup.
⅓ c. flour

Bring turkey parts to a boil and simmer for about 1 hour uncovered.
Skim off any foam. Liquid should reduce by about half.
Strain liquid into a measuring cup.
Remove turkey from pan.
Deglaze the pan with the strained stock.
Be sure to get up all the browned bits on the bottom of the pan.
Pour stock into a gravy deglazer measuring cup.
Return about 3 T. of the fat to the turkey pan.
Add ⅓ c. flour to 2 C. liquid (add water to make 2 C. if necessary) Stir until flour is dissloved and starts to bubble and brown. Grandma always used the Tupperware shaker for the flour/water mixture.
Add back all of the stock.
Stir over low heat until gravy thickens, about 5- 10 minutes.
Take off heat while gravy is still a bit runny as it will thicken as it sits.
