2 qts. green beans
1 1/2 qts. lima beans
1 qt. corn (optional)
2 qts. carrots
1 large head of cabbage
1 1/2 qts. turnips
1 stalk celery
1 1/2 qts. onions
2 qts. potatoes
4 - green peppers
2 gal. tomato juice
1 tsp. of Barley per quart
1 tsp. salt per quart

Directions:
Directions:
1. Wash and sterilize 18 - 20 qt. jars
2. Wash and dice all vegetables
3. Simmer diced vegetables and juice until cabbage is tender.
4. Fill jars with soup mixture. Before putting on the lid add 1 tsp. of barley and salt to each jar. Put on rings and tighten until just snug. Pressure cook soup 10lbs. for 35 minutes. Remove jars from the pressure cooker and let cool making sure the lids have sealed before storing in a cool place.

When ready to serve you can add 1 lb. browned hamburger or cooked stew meat. Heat and serve.

Grandma Stahlecker canned at least one batch of soup every year that we were able to enjoy throughout the year. It was so good on a cold winter day.
