Approx, 3 pounds of red potatoes cooked firm not mushy.
Chop into chunks when cool.

6 hard boiled eggs - chopped

chopped chives (for color)

small chopped onion (if desired)

Jar of Miracle Whip, mixed with some mayo, salt and prepared mustard to taste!

Better made a day ahead and stored in sealed container in fridge. This makes the flavor so much better.

This recipe was never actually written down. Anna has it in her head, and always makes it "according to taste" each time. The potatoes must be RED, and the dressing MIRACLE WHIP. Non negotiable!

Grandma would make this for the deli across the street from 231 Mineral Springs when Chris and Anna were little kids.

When Anna married Bob, Grandma and her helpers (including me) made about 40 pounds of this for their wedding reception! A labor of love.
