4 cups flour
1/2 teaspoon salt
One teaspoon baking powder
1 cup softened butter
Two cups sugar
Two large eggs
2 tsp vanilla
2 tsp lemon juice
zest of two lemons
Icing: 2 large egg whites
4 cups powdered sugar
Juice of one lemon
Green food coloring
Assorted sprinkles for decorating

Directions:
In large bowl mix flour, salt, and baking powder together. Use electric mixer to cream butter and sugar until fluffy. Beat in vanilla and lemon juice. Add flour mix, mix on low speed until combined. Rap do in plastic, chill for 30 minutes. Preheat oven to 325°. On floured surface, roll dough to one-fourth of an inch thick, use cookie cutters to cut shapes, and placed on greased cookie sheet. Please cookie sheet in the refrigerator for 10 minutes. Remove from refrigerator and bake for 8 to 10 minutes. Cool on wire racks.
Once completely cool, take the icing ingredients and beat the whites until stiff. Add sugar and lemon juice and beat for one minute more. If icing is too thick add more egg whites, if too thin, add more sugar. Decorate cookies with icing and sprinkles.

Usually when making Christmas cookies, I take this recipe and split it into two bowls before adding the lemon juice. I take 1/2 and go ahead and add the lemon, and the rest of the do I add nutmeg and a few teaspoons of eggnog. For the eggnog do, I cut them into Stars and use crushed butterscotch candy to create the stained glass star cut out in the middle. I take powdered sugar and mix a little eggnog into it to form the icing for the eggnog butterscotch Stars.
