2 pounds cooked carrots mashed
1 cup of Cracker Crumbs
6 - 8 ounces grated shredded Sharp Cheddar
1 cup Milk
1/2 cup soft Butter
1 teaspoon Salt
1/4 teaspoon Black Pepper
1/8 teaspoon Cayenne
3 Eggs
1/2 cup grated Onion
Paprika to garnish

Directions:
Directions:
Preheat oven to 350º. Peel and slice carrots, and cook until tender. Mash and combine with milk, cheese, butter, onions, crackers, and seasonings. Beat eggs lightly and fold into carrots mixture. Bake at 350º for 40 - 45 minutes. Sprinkle with paprika.

Gary loves this dish, which Holly Poling brought to a holiday dinner party at the home of Paulette and Ashley Brown. She says her mother has had the recipe since the 1960’s, and it is a staple at all Poling Thanksgiving dinners.
