1 cup cottage cheese
1¼ cup almond flour
1 cup Gluten free flour
⅓ cup sun-dried tomatoes
1 tsp GF Baking powder
¾ cup parmesan cheese
3 T vegie oil
4 large eggs, lightly beaten
a few springs of thyme

Directions:
Directions:
Oven to 400.º. Line a muffin tin with 12 paper cups.
2. Mix cottage cheese with flours, tomatoes, BP, most of the parmesan and thyme. Add the oil, eggs and 1 T water.
3. Spoon batter into muffin tin and sprinkle with remaining parmesan. Bake 30-35 minutes. Serve warm.
