2 cans of LeSueur very young peas

1 1/2 stalks of celery, scrubbed, and chopped small

1 small jar of pimientos, chopped

1 cup shredded or small cubed cheddar cheese

1/2 cup of mayonaise (after mixing, you may need a little more)

salt and pepper to taste

Directions:

Mix all ingredients together, and refrigerate until ready to serve.

For holidays, you could serve a scoop on a lettuce leaf. Garnish with 2 cherry tomatoes.

We went to visit Grandma and Grandpa Heard a few times a year, since Lake Charles, Louisiana was a couple hours drive away, and the highway was bad. (Yes, we did have paved roads back then!)

Usually at Thanksgiving, Grandma made pea salad as our salad. I never liked it as a child, but as I grew up, I liked it, and it made me have memories of visiting them.

Back in those days (1950's) we ate some of everything even if we didn't like it, because we didn't want to hurt Grandma's feelings.
