1-1/4 cup boiling water
1/4 cup shortening
2 eggs, beaten
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 cup oatmeal
1 cup granulated sugar
1 cup brown sugar
1 teaspoon cinnamon
1 1/3 cup flour

Directions:
Directions:
Pour boiling water over the oatmeal and let stand 20 minutes. Mix in shortening, granulated sugar, brown sugar, salt, cinnamon, vanilla, and 2 eggs. Blend well. Add flour and baking soda, mixing well. Pour into greased 8x8 baking pan and bake in 350 degree oven for 35 minutes. Test with toothpick for doneness (when pick comes out clean, cake is done).
