4 Tbs. butter
1 Tbs. hot water
¾ cup sugar
2 beaten eggs
¼ cup fresh lemon juice
Rind from one lemon

Directions:
Directions:
In medium sauce pan, over medium heat, melt butter.
Add hot water. Add sugar.
*Remove from heat and cool.
Add beaten eggs, lemon juice and rind.
Cook over low to medium heat till slightly thickened - about 15 minutes.

Cool. Add to baked tart shells prior to serving.
