Coat both sides of three flour tortillas with cooking spray. Sprinkle both sides with cinnamon and sugar (mixed together). Cut tortillas into 4 wedges. Line baking sheet with foil. Bake at 325 degrees for about 20 minutes or until crisp. Turn wedges over 1/2 thru baking. Put baked tortilla chips on sides of ice cream in dishes.
