½ cup Crisco shortening
¼ pound (1 stick) unsalted butter (at room temperature)
1-cup white granulated sugar
2 eggs (at room temperature)
1-teaspoon vanilla extract
1-teaspoon baking powder
¼ teaspoon salt
2 ½ cups unsifted all-purpose flour

Directions:

Mix Crisco, butter and sugar until smooth.
Mix in one egg at a time.
Mix in vanilla, baking powder and salt.
Add about half the flour at a time and mix in thoroughly. Dough will be sticky.
Form into a ball, cover with flour, wrap in plastic wrap and chill for at least one hour (or even overnight).
Roll chilled dough to ¼ inch thickness.
Cut with cookie cutters.
Bake on parchment paper lined baking sheet at 400o for 7 minutes. Frost when cool.

These sugar cookies are soft and delicious. They melt in your mouth. The recipe can be doubled and works fine. I strongly recommend using a stand mixer to make the dough. The cookies are delicious as is, but frosted or sprinkled with sugar makes them even tastier.
