1 Cup butter
½ Cup Sugar
2 egg yolks (slightly beaten)
2 Cups Flour
2 egg whites (slightly beaten)
¼ tsp Salt
½ tsp Almond Extract
2/3 Cups chopped walnuts

Cream butter, sugar and egg yolks until light and fluffy. Add almond extract. Add the flour and salt until ingredients are just holding together. The dough will be crumbly. Form dough into balls, the size of a large walnut. Place in fridge for about 2 hours or so.

Preheat oven for 300º. Roll balls in egg whites, then roll in Walnuts. Place on greased cookie sheet. Press [flatten] balls with the bottom of a glass dipped in SUGAR.

Bake about 12 minutes [or until lightly brown.

Gramma Gus made these every Christmas. As a little girl, she would let me dip the glass in sugar and press the cookies on the cookie sheet. These were one of my favorite Xmas cookies.
