2 cups flour 1 tsp baking powder 1/2 cup sugar 1/2 tsp salt 1 tsp baking soda 1 egg 3/4 cup apricot jam 1/4 cup orange juice 2 Tbls oil 1 tsp vanilla 1 cup raisins (optional)
Sift together all dry ingredients. In a large bowl beat together all the wet ingredients, then add the dry ingredients to the wet ingredents and stir just to blend well. Do not over mix. Pour into a greased and floured loaf pan. Bake at 350º for one hour.
As a variation to this recipe, Gram has a note that says you can replace the jam and orange juice with one cup of crushed pineapple with it's juice. This is a recipe that she got from her cousin Margie.
