1 cup self-rising cornmeal
½ cup self-rising flour
¾ cup buttermilk
2 eggs (room temperature)
2 tablespoons vegetable oil

Directions:

Preheat oven to 350º

Wisk together all dry ingredients; mix well. Add eggs and milk in center and stir together until blended.

Put two tablespoons of grease (or Crisco) into medium iron skillet and place in oven. Once grease and skillet is heated, pour excess grease into batter and mix well.

Pour pour into a greased pan and return to oven. Bake for approximately 20 to 25 minutes.

Remove from oven and flip out onto plate to cool. Spread top with butter.
