• ½ gallon chocolate ice cream
• 1 pkg oreo cookies
• 1 carton cool whip
• Chocolate syrup (homemade syrup recipe in notes)

Directions:
Thaw ice cream enough to slice with knife. Crumble Oreos in a Ziploc bag with a rolling pin. Place a thin layer of crushed Oreos on a freezable 9x13 pan. Thinly slice ice cream, lay slices on top of oreos, filling gaps. Spread half of the carton of cool whip over the ice cream. Generously drizzle chocolate syrup over the cool whip. Put a generous layer of Oreos over the syrup, layer remaining slices of ice cream, filling gaps, spread remaining cool whip over the ice cream, generously drizzle chocolate syrup, and sprinkle remaining Oreo cookie crumbs over the top. Freeze level until firm. When serving, you can set the cake out for 15 minutes before slicing to make it easier to slice and serve.

Other varieties-
• You can use vanilla or cookies and cream ice cream if preferred.
• Strawberry Shortcake Ice Cream Cake version- replace oreos with white cake or pound cake, use vanilla or strawberry ice cream, use strawberry ice cream topping instead of chocolate syrup, regular or strawberry cool whip, and chop fresh strawberries to top cake before serving (I don’t freeze the strawberries, they are hard to bite into when frozen)
• Chocolate Mint Ice Cream Cake- Use Keebler Grasshopper cookies instead of Oreos, choc syrup, and mint chocolate chip ice cream.
