1 c. sugar
½ c veg oil OR 1 stick soft butter
4 eggs, separated
2 c finely ground walnuts or pecans
1¾ c flour
1 t. baking powder
1 t. vanilla
1 T dark rum
¼ c sour cream

Directions:
Directions:
Preheat oven 350º

Cream butter or oil with sugar together well with mixer, add egg yolks one at a time. Beat well after each until very fluffy. Stir in nuts, vanilla and rum. Gram says "if it seems too thick, stir in more rum!" Stir flour and baking powder together, add gradually to batter. Be sure to mix very well. Fold in sour cream. In separate bowl, beat the egg whites until very stiff, then fold into batter. Divide into two 8" round cake pans, well sprayed w PAM. Bake about 1 hour, or until toothpick inserted in center comes out clean. When cooled, fill layers with apricot jam and stack. Frost w simple frosting of 1 c. powdered sugar & 2 T milk, drizzled over cake.
