Ingredients:  
In a large bowl – mix the following and set aside:

2 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp cinnamon

In a small bowl – mix the following and set aside:
3 cups shredded carrots
1 ½ chopped walnuts

In a mixing bowl – add the following and mix on medium speed until creamy
1 ½ cups vegetable oil
2 cups sugar
4 eggs (add these one at a time)

Directions:
Directions:
After oil/sugar/eggs are mixed thoroughly, add flour mixture slowly until smooth. Add the carrots and walnuts until mixed.
Pour in a 9 x 13 cake pan. Bake for 45-50 minutes. Test with a toothpick. If the toothpick comes out clean, cake is done.

Icing:
8 oz cream cheese (room temp)
4 T unsalted butter (room temp)
2 cups powdered sugar (not packed)
1 ½ tsp pure vanilla extract
Cream together the cream cheese and butter. Add powdered sugar slowly. Mix until smooth. Add vanilla.
