1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla extract
1 large egg
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Extra sugar, (for rolling)

Preheat oven to 350º. Line baking sheet with parchment
In the bowl of your stand mixer. Whip butter, peanut butter until fluffy. Add in sugars stand mix until will combined.
Mix in egg, vanilla, baking soda and baking powder, and salt.
Roll heaping tablespoon of dough into the sugar.
Place on prepared pan 2 inches apart.
Bake 9-10 minutes
Cool on pan 5 mins
