2½ C. Flour
1 C. Sugar
1 C. Brown Sugar
1½ tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. salt
1 tsp. vanilla
2 tsp. cinnamon
½ tsp. Nutmeg
1½ C. veg. oil
1 stick melted butter
4 eggs
3 C. grated carrots

Directions:

Preheat oven to 350º
Have all ingredients at room temp.

Mix all dry ingredients in a large mixing bowl:
Flour, brown sugar, regular sugar, baking soda, baking powder, salt, cinnamon, nutmeg.
Mix in 1c. veg. oil, 1 stick melted butter. Add 4 eggs one at a time, mixing after each one. Add 1 teaspoon Vanilla. Add carrots to batter using a spatula .
Line 2 -8" pans or 1- 9" pan with parchment paper.


Bake for 40 minutes check with tooth pick to make sure done.
Cool and than turn upside down to completely cool before icing.

Top with Cream Cheese Icing or eat it plain.

Cream Cheese Icing:
8 oz. cream cheese
½ c. softened margarine
1 box powered sugar
1 tsp. vanilla
1 c. chopped nuts (optional)

Cream together cream cheese, margarine, vanilla.
Gradually add in powdered sugar. Mix in nuts.
