Gramma Norie's Buns and Cinnamon Knots Recipe

Ingredients: 3 packages yeast 3/4 cup warm water
11 & 1/2 cup flour 3&1/4 cup warm water 5 T. shortening- melted and cool 5 tsp. salt 1/2 cup sugar
Cinnamon knots: 1 cup melted butter 2 cups sugar mixed with cinnamon to desired taste

Directions:In a bowl, add yeast to 3/4 cup warm water and let dissolve and proof.
In a very large bowl- mix sugar, salt and 3&1/4 cups warm water and stir well. Add the proofed yeast/water mixture. Add 1/2 cup flour and beat well. Stir in melted shortening. Add remaining flour a cup at a time ( Gramma would have said "add by handfuls!") until soft dough forms - do not add too much flour! Turn onto a floured board and knead until bubbles appear and dough is smooth. Raise dough in greased bowl until doubled. Punch dough down and raise again. Form into buns-Gramma never made loaves - and let rise on greased cookie sheets. Preheat oven to 350º Once buns have doubled, bake until nicely browned.
For knots: Grease a 9x13 pan. Pull off pieces of dough and form small long hot dog shapes. Dip each in a pan or bowl of melted butter and then - in a separate dish- roll shape into the cinnamon /sugar mixture. Tie each roll in a knot and place in pan spaced 3/4 -1 inch apart. Usually pan will hold 12-15 knots depending on their size. Let raise until doubled and then bake until browned. Turn roll pan over onto a cookie sheet or rack to cool.
