2 cups granulated sugar
4 T cocoa powder
1 cup milk-not low fat
1/2 stick unsalted butter-4 ounces
dash of salt

1 tsp vanilla
1/8 cup additional unsalted butter

Directions:
Directions:
Put ingredients into a large pot. Using a candy thermometer boil to soft ball.
DO NOT STIR WHILE COOKING
Be patient while it cooks to the indicated temperature.
When it reaches sot ball remove from heat and pour into mixer bowl.
Beat several minutes until creamy-adding the butter and vanilla.

Pour into grease loaf pan and let set.

I always make this at Christmas time and often gift it to friends-yum!

You can add nuts or cashews to the top of the fudge and you can get creative with flavors. I would often layer it with peanut butter whipped with butter and powdered sugar.
