2 c. flour
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp lemon zest
2 Tbsp lemon juice
1/2 c. butter
1 c. sugar
1 egg
1 tsp vanilla
Glaze
2 c. icing sugar
2 Tbsp lemon zest
1/3 c. lemon juice
Directions:
Directions:
Preheat oven to 350 F.
Whisk flour, soda, salt and zest.
Beat butter and sugar until fluffy.
Add egg, vanilla and juice, combining well.
Add flour mixture.
Drop by tablespoon onto baking sheets.
Bake 15-20 minutes (until golden).
Cool 2 minutes on sheets.
Move to racks.
Glaze
Whisk icing sugar, lemon zest and juice.
Top with glaze.
Set 1 hour.
