Grandma’s Coconut Pie Recipe

1 cup sugar
2 cups milk
3 TBSP plain flour
3 eggs separated
1 TBSP vanilla
2 TBSP margarine

Eggs need to be room temperature

Directions:
In bottom of double boiler bring water to soft boil
In top of double boiler stir in 3 egg yolks and two cups of milk
Slowly add sugar, flour, vanilla and margarine
Whisk often
When thick add 1 cup coconut
Pour into baked pie crust

Meringue: bring to boil 1 1/4 cups sugar, 1/2 cup water, 1 TBSP cornstarch. Cook til thick and let it cool
Beat egg whites til soft peak. Add above mixture and beat until stiff
Pour over pie filling
Bake @ 350 for 10 minutes or til meringue is lightly brown

I found it’s best to make meringue thickening before pie filling. This gives it time to cool down
