2 - 8 oz cans almond paste, coarsely crumbled
1 ½ cups powdered sugar
½ teaspoon salt
2 large egg whites
2 tablespoons mild honey
1 cup pine nuts (pignoli) about 4.5 oz

Directions:
Directions:
Preheat oven to 350 degrees F.
Pulse the almond paste in a food processor until broken up into small bits, then add powdered sugar and salt. Continue to pulse until finely ground about 1 minute.
Beat together almond mixture, egg whites and honey in electric mixer at medium-high speed until smooth about 5 minutes (batter will be very thick).
Using wet hands (keep small bowl of water nearby to re-wet hands as needed) shape dough into balls and roll in pine nuts. They should be about 1.5 inch rounds. Place onto parchment lined baking sheets. Press pine nuts into cookies if needed.
Bake cookies in upper and lower thirds of oven, switching positions halfway through baking, until golden about 12-15 minutes total. Slide cookies on parchment paper onto cooling racks to cool completely then remove the cookies from the parchment paper.
