1-2 Chicken carcass or a whole turkey carcass
4-6 carrots, cut in 2” chunks
3-4 stalks of celery, cut in 2” chunks
4-5 whole garlic cloves
1 large or 2 medium onions, sliced
1/2 T whole peppercorns
Salt

Directions:
Directions:
Place all ingredients in a large stockpot, add enough water to almost cover. Bring to a boil, the turn down heat to a simmer. Simmer for 8-10 hrs, stirring occasionally and adding additional water as needed. Cool and strain solids from broth. Pour into containers and allow to sit overnight in fridge. Any fat that comes to the top surface will solidify and can be removed at that point. I store mine in the freezer to use for soups. When making soup i will add some chicken bouillon to taste.
