Granny’s Pecan Pie Recipe

1/2 cup butter (softened)
1 1/3 cup sugar
6 eggs
1 bottle Dark Karo Corn Syrup
1 tsp salt
4 cups chopped pecans
2 (9 inch) deep dish pie crust

Directions:
Directions:
Preheat oven to 350º. Sit frozen pie shells out to thaw.

Cream butter, sugar and eggs together. Add Karo syrup and salt. Mix well. Stir in, by hand, the pecans. Distribute the pie filling evenly between the 2 unbaked pie shells. Be aware that the pecans tend to all pour out in the first pie so make sure the nuts are evenly disbursed between the 2 pies before baking.

Bake for 60-65 minutes, making sure the center of the pie is firm
and not runny.

This is a recipe my Granny used for (at least) my entire life when making pecan pies each year during the holiday season.

It was the last holiday season she would ever experience here on earth, and she was in the hospital. It was about a week before Thanksgiving, and I went to visit her. She was worried about how the family Thanksgiving would go since she wasn’t going to be able to be there to run the show. I assured her we had everything under control and that we would bring her a plate of food on Thanksgiving afternoon. As the two of us sat in her hospital room and talked, I realized that I didn’t have a recipe for pecan pie. When I mentioned that to her and asked if I could go by her house and borrow her cookbook, she said, “You don’t need the cookbook. Just grab something to write with and on. I’ll tell it to you.” I looked around and the closest thing I could find was a yellow envelope that was sitting on the window seal of her hospital room. She had received a get-well card inside it. I quickly grabbed it and scrambled to find a pencil in my purse. I began to write as she spoke the recipe out loud.

The pecan pies were as good as always that year; Granny even said so! To this day, I still have that same yellow envelope with the jotted down recipe on it. It’s in my cookbook and I use it every holiday season when baking Granny’s Pecan Pies. It may seem silly, but to me, there’s a story there and it makes me feel connected to her, as if she is in the kitchen with me, when I pull out that old, now kitchen stained, greeting card envelope to bake Granny’s Pecan Pies.
