1 lb Hot dogs (or sausage or Spam) cut into 1" pieces
1 1/2 cups Sauerkraut (can), optional
1/4 c Olive oil
2 Tbsp garlic
6 Russet potato, medium, cubed
3 yellow onions, medium, sliced into 1" pieces
4 tbsp Caribbean spice mix (or any spice mix you like to put on roasted potatoes, like steak spice, etc.)

1. Heat oil in large pan on medium high, then cook the hot dogs until they begin to firm up - about 5 minutes, then remove from the pan with a slotted spoon.
2. Put potatoes in a large mixing bowl and toss with oil. Then add the spice mix and toss more to fully coat all the potatoes.
3. Add the potatoes to the pan and cook on medium with the lid on for 20-30 minutes until almost fork tender, stirring occasionally.
4. Add the hot dogs, onions, garlic, and optional sauerkraut back to the pan, stir around to combine, cover and cook another 10 minutes, stirring occasionally.
