2 gallons of small cucumbers
2 cups of coarse salt to 1 gallon of water
Boiling water
2 tbsp. Alum
6 cups vinegar
12 cups of white sugar
1/4 tsp oil of cinnamon and oil of cloves
green food coloring

Directions:
Slice cucumbers (unpeeled and thin).
Pour coarse salt over cukes and set aside for 7 days, stir each day.
Day 8, drain and cover with boiling water and let stand for 24 hours.
Day 9 cover with hot water and alum.
Day 10 drain dry on a towel.
Day 11 cover with the hot syrup (vinegar, white sugar, oil of cinnamon and cloves).
Day 12 drain and reheat syrup and add green food coloring.
Day 13 drain and reheat and add more food coloring.

Put in jars and seal tightly.

Day 1 - 7, place the container in a dark cool spot.
When placing in jars, fill approx. 3/4 full with pickles and pour syrup over top.

The pickles are to be made with fresh baby cucumbers in late August or early September.
