2 lbs. frozen hash browns
1/2 cup melted butter
2 cups sour cream
1/2 cup chopped onion
2 cups old cheddar cheese
2 cans undiluted cream of chicken (or mushroom) soup
salt and pepper

Topping:
2 cups crushed crackers or bread crumbs
1/2 melted butter

Directions:
Directions:
Melt butter and pour over hash browns. In another bowl mix rest of ingredients.
Pour mixture over potatoes and mix well.
Place in a 9x13" pan

Mix toppings together and spread over hash brown mixture.

Bake at 350 for 1 hr. or until topping is brown and casserole bubbles.
