Directions:Preheat the oven to 350 degrees.
Cook the macaroni until almost done. Don’t overcook or it will be mushy after baking, since it continues to cook while baking. Drain.
In a large ovenproof dish, layer in 1/2 the macaroni, then cheese, then the balance of the mac and lots of cheese on top.
Bake covered for 30 minutes, then uncover and bake for an additional 5 minutes. It should be lightly browned on top and a little crispy on the edges. |

Notes: Jeannie's and Walt's favorite!
Walt says: My grandmother, Mom's mother was a great cook. Everything I learned about cooking up to the age of 18, I learned from my grandmother. My mother not so much. As a 1948 graduate of Birmingham Southern College and a med tech for an OBGYN group she considered herself a professional woman. She told me that when she got married all she knew how to make was hot water for tea. So, in the 1950s with 2 kids, Mom cooked simply. She hit it out of the park on this one… simple, 2 ingredients, comfort food. If you love cheese, this one's for you. I grated the cheese for Mom, and I still do, to make sure the cheese layers are done right. I will fight you for the crispy cheese around the edge of the dish.
