6 large red potatoes, boiled and cooled
1 medium onion, chopped
2 stalks celery, chopped
1 cup sweet pickles, chopped
6 hard-boiled eggs
1/2-3/4 cup mayonnaise
3-4 tbsp apple cider vinegar

Directions:
Directions:
Skin potatoes and chop into 1" sized pieces. In large mixing bowl, combine potatoes, chopped onion, celery, pickles, and chopped eggs. Season with salt and pepper and mix thoroughly.
In small bowl, combine mayonnaise and apple cider vinegar. Gradually pour over potato mixture and stir with a large spatula. Add enough of the mayonnaise mixture to coat the potatoes but not drown them. Season again with salt and pepper to taste.
Pour into serving bowl and refrigerate until cold, about 2-3 hours.

Gramma was a pro at making this potato salad and I could rarely match her flavor. She would mix the potatoes and mayo with her hands, not with a spatula. Maybe that's why mine never tasted as good. Make sure you use SWEET pickles and apple cider vinegar.
