2 Cups All-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 (1 stick) butter softened
1/2 cup sugar
1 egg
3/4 cup of raisins or currants
1 teaspoon caraway seeds
1/3 cup buttermilk

1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper or spray pans with Pam.

2. Combine flour, baking soda and salt in medium bowl. Beat butter and sugar in large bowl with electric mixer at medium speed until light and fluffy. Add egg; beat 1 minute or until blended. Add Flour mixture; beat at low speed until blended. Beat in currants or raisins and caraway seeds. Add Buttermilk; beat until blended. Drop tablespoonfuls of dough 1 inch apart on prepared cookie sheets.

3. Bake 12-15 minutes or until golden brown. Remove to wire racks to cool slightly.
Serve warm.

I roll mine in sugar before placing on cookie sheet. I also add more caraway seeds and raisins then the recipe calls for.
