4 lbs. butternut squash
⅓ c. butter
1 Tbs. grated onion
¼ - ½ tsp. coriander
½ - 1 tsp. crushed rosemary
1 tsp. salt
melted butter
2 Tbs. cream
Salted pecans coursely chopped

Directions:
Directions:
Place squash cut-side down in pan with ¼ inch water
Cook at 400º for 30-40 minutes.
Mash squash with cream, butter, onions, herbs, and salt

Turn into buttered shallow baking dish.

Toss pecans around edge and drizzle with melted butter.

Cook at 400º for 20 minutes.
