10 inch tube pan or round angel food pan. Preheat oven to: 325º
Baking time about 45 minutes.

1 ½ c. cake flour, sifted before measuring
2 c. sugar
1 ½ c. egg whites (about a dozen eggs)
½ tsp. salt
1 ½ tsp. cream of tarter
1 ½ tsp. vanilla
1 tsp. almond flavoring

Sift the cake flour once, then measure and set aside. Measure sugar and divide into two equal parts. Add one-half of the sugar to the cake flour and sift the two ingredients together 4 times. Sift the remaining sugar 4 times. Do all of this before starting to beat the egg whites. Divide the eggs so you have only the egg whites placed into a large mixing bowl. Add salt to egg whites, beat until foamy, add cream of tarter and continue to beat the egg whites until fluffy and stiff but not dry. Then add one-half of the sugar to the egg whites 2 Tbls. at a time. If an electric mixer is used, use low speed to do this. Use a whisk beater if you are mixing by hand. Once you have added the sugar add the almond and vanilla flavorings. DO NOT use the electric mixer from here on to add the remainder of the ingredients, but use a wire whisk. Fold in cake flour/sugar mixture, adding it to the egg white mixture 2 Tbls. at a time. Fold in with slow, careful folding strokes. Pour into an ungreased pan. Cut down through cake batter with a silver knife, to remove large air bubbles. Bake. When the cake is removed from oven, invert pan to cool until cold. I put it on a bottle neck. Then carefully cut around edge with sharp knife to remove from pan.
