2 lbs. orange Roughie

2 tbsp. Salt

½ tsp Pepper

1 tbsp. cornstarch

4 tbsp. all purpose flour

1 egg beaten

4 tbsp. Italian bread crumbs

3 tbsp. of oil

2 tbs. of butter

Directions:
Directions:
1. Rinse fish

2. Place fish in bowl

3. Sprinkle salt on top

4. Cover with cold water

5. Refrigerate for 2 hours

6. Remove

7. Rinse

8. Pat dry

9. Place flour in shallow dish

10. Add cornstarch to flour

11. Dredge fish in flour to lightly cover

12. Shake off any access flour

13. Dredge fish in egg

14. Dredge fish in Italian breadcrumbs

15. Sprinkle with pepper

16. Heat oil and butter in large frying pan

17. Sauté fish for few minutes on each side (medium heat)

18. Remove

19. Place on a paper towel to soak up extra fat

20. Finish in a 350º F oven (7 minutes)

21. Serve hot
