Cookie:
1 cup lard
1 tsp salt
1 cup brown sugar
1/2 (3/4) cup sour cream
2 tsp baking soda
2 cup flour
3 cup oatmeal

Dates:
1 pkg. dates cut
1 cup brown sugar
1 cup water
1/4 cup lemon juice
3Tbsp butter
1 tsp vanilla

Directions:

Cookie:
Combine lard and sugar, beat. Add sour cream and soda together and then add to lard and sugar. Alternating with the flour and oatmeal. Consistency is sticky. Roll out on floured surface and cut into circles (use a jar lid)

Dates:
Combine and bring to boil until thick. Then add butter and vanilla.

Place the date mixture between the two cookies to create a sandwich.

Must have with coffee.
