Mazzola oil (enough to cover the bottom of the skillet/ pan)
1 lb. spaghetti (or angel hair) pasta
6 large eggs - scrambled
1/8 cup fresh Italian parsley
1 1/2 cups Pecorino Romano grated cheese, plus extra cheese for serving.
1 tsp salt (to taste)
1/2 tsp pepper

In a large pot, bring water to a boil.

Add the pasta to the water, stir a few times to prevent the past from sticking together.

Cook according to the directions on the package, stirring occasionally, until al Dente.

Drain and mix in the eggs, parsley, grated cheese, salt, and pepper.

Heat skillet (medium heat)

Add oil (just enough to cover the bottom of the pan)

Pour mixture into the pan and spread it evenly

Turn over the pie when the bottom is golden brown to cook the other side.

Once both sides are golden brown, remove from the pan and service. Sprinkle with more grated cheese, as desired.

The easiest way to turn over the pie is to use two flat plates and two spatulas. Lift the pie out of the pan using both spatulas an place it on one of the flat plates. Take the other plate and lay it on top of the pie. With the pie now sandwiched between the two plates, flip the plates over and place on the counter. (Now the cooked side of the pie should be face up.). Using the spatulas, lift the pie and place back in the pan. Cook the other side until golden brown.
