Dough ingredients:
4 c. flour
6 eggs
2 tsp. baking powder
dash salt
2 Tbls. olive oil

Form a hole in the center of the flour and add eggs. Hand mix dough well. Oil the outside of dough and let stand 3-4 hours.

Cheese mixture:
3 lbs. ricotta cheese
2 c. grated cheese
2 tsp. dried parsley
1 rounded tsp. baking powder
6 jumbo eggs
Chopped ham may be added (optional)
Mix well

Directions:
Flour surface and dough while rolling.(Grandma used a thick wooden dowel.) Fill dough with cheese mixture. Seal top and bottom dough on all sides. Cut slits in top of dough. Bake at 375º until cheese mixture bubbles out and dough is lightly browned.
