3 eggs beaten
2 cups Splenda (or zero sugar sweetner)
2 cups grated (seeded and peeled) cukes
1 cup Olive oil
1 1/2 tsp vanilla
3 cups flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder

Keep back 1 cup chopped nuts to add later - I use walnuts.

Toss everything (but nuts) into the Bread machine on dough only (do not let rise)

When everything is well blended mix in nuts by hand.

Pour batter into 2 greased 9 x 5 loaf pans. (I spray then line pans with Parchment paper)

Bake at 350 degrees for 50-60 minutes - until a toothpick comes out clean
