1/4 of a Spanish onion very finely diced.
1 1/2 table spoons of chopped garlic
1 bag of Mussels (PEI) if possible
two dabs of butter
White wine - (NOT Sweet)
one lemon
1/8 teaspoon of tarragon

Directions:
Directions:
clean the mussels (wash them and take of any beards) toss any with broken shell or that are open and won't close ( tap them to see if the start to close up )

put in half of the butter
put the onions in the pan add pepper NO SALT in this dish cook till soft
add garlic cook to a light brown
add olive oil if to dry (should be a bit of oil visible)
put in the tarragon stir twice then
put in the mussels
add the cup wine with the lemon juice mixed in
cover and let steam
mussels must be open to eat

when all the mussels are open (do not cook more than 10 15 max)
add the last of the butter and stir until melted
Pour into a big bowl

Serve with crunchy bread

This dish is one of my favorites but I do not cook it a lot as the family are not fans. However, served with fresh bread, a white wine to drink it is truely a great meal.
