1/2 cup butter, softened
3/4 cup brown sugar, firmly packed
1/2 cup white sugar
2 large eggs
1 1/2 tsp vanilla
1 3/4 cup flour
2 tsp cinnamon
3/4 tsp. nutmeg
1 tsp. baking soda
1 tsp salt
3 cups old fashioned oats
3 cups rhubarb, finely chopped
1 cup white chocolate chips
3/4 cup walnuts, chopped (optional)

Directions:

Pre-heat oven to 375º.
In a large bowl, beat butter and sugars together until creamy. Add eggs and vanilla, blend well.
In a separate bowl, sift together the flour, baking soda, cinnamon, nutmeg and salt. Add to the wet ingredients and blend until smooth.
Add in the oatmeal and rhubarb and stir with a wooden spoon until well combined. Add the white chocolate chips and stir well.
Line a baking sheet with parchment paper and drop cookies by large spoonful onto the paper. Bake for 9-12 minutes. Check the first batch for the right timing. Mine usually are best at 11 minutes.
