2 cups flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 cups shredded carrots
1 large apple, peeled and shredded
1/2 cup nut meats
1/2 cup shredded coconut
1/2 cup raisins
3 eggs
2/3 cup vegetable oil
2 teaspoons vanilla

In a large bowl, combine the flour, sugar, baking soda, cinnamon, salt and nutmeg. Stir in shredded carrots, apples, nuts, coconut and raisins. Beat the eggs with the oil and vanilla; add to the flour mixture and stir until well-blended. Grease or line muffin pans with paper baking cups. Spoon batter into muffin cups 2/3 full. Bake in a 350 degree oven for 20 to 22 minutes or until light golden brown. Yield: 24 muffins.
