2 oz high smoke point oil like grape seed
4 oz yellow onion, medium dice
4 oz carrots, medium diced
6 whole garlic, crushed
6 Roma tomatoes quartered
3 T tomato paste

Sachet
Bay leaf
4 fresh basil leaves (sub. 1/8 tsp dried)
4 fresh oragano leaves (sub. 1/8 tsp dried)
1/8 tsp dried thyme
1/8 tsp dried Rosemary
1/8 tsp Peppercorns

4 oz red wine
4 oz Miatake mushrooms
4 oz asparagus cut into 1/2” pieces
4 servings cooked pasta suggested sweet potato orzo

Directions:
Directions:
Heat large sauté pan with oil until sizzling. Add onion, carrot and garlic. Sauté until softened but not browned. Add tomatoes and paste with a pinch of salt to pull out moisture. Sauté about 10 minutes. Deglaze with red wine. Add a pinch of pepper and sachet. Bring to a boil, reduce heat, cover and simmer until reduced to desired consistency. Remove sachet.
Place in blender and blend until smooth.
Add some oil to sauté pan and sauté mushrooms and asparagus with a pinch of salt until al dente. Add pasta. Strain tomato mixture into sauté pan with pinch salt and pepper. Sauté for about a minute. Adjust seasoning with salt and sugar. Serve.
