Ingredients:
Ingredients:
2½ cup all-purpose flour, sifted
1 tsp salt
⅔ cup shortening, chilled
¼ cup unsalted butter, cubed and chilled
6 -7 tbsp ice water

Directions:
Directions:
1. Blend together the flour and salt. Cut in the shortening and butter using a pastry blender until the mixture looks like coarse meal. Add 1 tbsp of ice water at a time, mixing with a fork until the pastry holds together to form a dough.
2. Divide the dough in half, shape each into a ball, wrap tightly in plastic wrap, and refrigerate for at least 2 hours. Remove dough from refrigerator and let it sit out for about 10 minutes.
3. On a lightly floured surface, roll out the dough with a floured rolling pin to make a disk about 12 inches in diameter and transfer to an ungreased 9-inch glass pie plate. Press firmly against side and bottom.
4. Reflour the rolling pin and the rolling surface and roll out the remaining dough to make another disk for the top crust.

Personal Notes:
It seemed like Grandma would whip this pie crust together in no time. I can still remember her handing me my crust for the mini apple pies that I would make in my Easy Bake oven. Those were some sweet memories.
