Makes 2 Pies

2 1/2 cups Sugar
2 tbsp Flour
1 can Pet (Evaporated) Milk
2 cans Whole Milk
6 Egg Yolks (save the whites for meringue)
1 Whole Egg
2 tbsp butter
1/8 tsp salt
1 tsp Vanilla
1 cup Nestle's Quik
1 tbsp Dark Cocoa Powder

Miringue

1/2 tsp Cream of Tartar
6 Egg Whites
6 tbsp Sugar

Pie

Combine dry ingredients
Combine evaporated and whole milk
Beat egg yolks and egg; add to milk mixture
Add milk/egg mixture to dry ingredients, combining thoroughly
Cook until thickened in a double boiler, stirring constantly
Remove from heat and stir in vanilla and butter; cool
Pour into either handmade or store bought pie crusts that have been baked

Meringue

Beat egg whites with cream of tartar until stiff
Add sugar, a little at a time, while continuing to beat egg whites
Spread meringue over the pie filling and bake at 350º until brown

As you can see from the recipe, this pie takes a lot of work - you must stir constantly while the filling is being cooked, or it will burn. Granny Mabel still made this pie every time we came to visit or when she would visit us. Tom didn't like many sweets. When he was around 6 or 7, he got into the Halloween candy, He and a friend ate all the candy and, of course, got really sick. After that his Halloween cany had to be thrown out at Easter time and his Easter candy at Halloween. Despite this, he would devour this pie!
