5 large Russet potatoes (12oz each)
10 slices of turkey bacon or regular bacon
½ tsp salt
¼ tsp black pepper
2¼ cup of shredded 2% cheddar cheese (approx. 10 oz)
3 scallions trimmed and sliced (optional)
½ cup of reduced fat sour cream (optional)

Directions:
Directions:
1) Scrub potatoes and microwave on high for 16 minutes
2) In large skillet, cook bacon until crisp over medium heat
3) Position oven rack 6 in from oven top and heat broiler
4) Line baking sheet with nonstick foil.
5) Slice potatoes in half length-wise and scoop out center leaving about ¼ edge
6) Place skins cut side down on sheet and coat with non-stick cooking spray
7) Broil (450º-500º) for 4 min
8) Remove potato skins from oven and slip over. Season each skin with salt and pepper.
9) Sprinkle each with 2tbsp of cheese, top with bacon and add 2 additional tbsps of cheese per skin.
10) Return to broiler for 3 mins or until cheese melts.
11) Top with scallions and serve with sour cream if desired.
