2 tbsp. flour

1/2 cup large flake oats

1/2 cup milk

2 tsp. baking powder

1 tbsp. sugar

1/2 tsp. salt

1 egg slightly beaten

2 tbsp. oil

Heat the milk and add oats. Let stand for 10 mins.

Add remaining ingredients to oats and milk. Add more milk if you want a runnier consistency. Thinner makes a more crunchy pancake.

This recipe only makes 4 pancakes. Easily doubled or tripled. Great to make ahead and freeze. I love to pop these in the toaster and eat like toast with peanut butter and/or jam.
